Brownie Bites with Caramel Sauce

Chocolate brownie bites and salted caramel? Oh my!

I love hosting tea parties. Everything about them appeals me… from the size of the foods offered, to the beauty of a well-planned and set table.

And the ambiance… It’s just different!

The time I spend planning and sketching the layout for a tea party… making a list of the recipes I want to include… deciding which china and tea settings to put out… I love all of it.

Tea parties are a chance to experiment with new recipes, using different textures, tastes and looks, and these Brownie Bites with Salted Caramel Sauce are a perfect fit.

If you haven’t hosted a tea party in a while – or ever – I encourage you to give it a try. I think you’ll find, like me, that tea parties are a breath of fresh air in an otherwise crazy and busy world… a chance to experience a short trip into the past, when tea time was a daily event and the pace of life was a bit slower.

It’s not brownie and it’s not a cake… It’s somewhere deliciously in between. When you top it with salted caramel sauce, it’s simply heaven in a bite!

I use my Nordic Ware Bundt Brownie Pan to make these adorable little fudgy brownie baby cakes.

Brownie Bites With Caramel Sauce

Ingredients

Brownie Bites

  • 1/ 2 cup melted butter or vegetable oil
  • 1 cup of sugar
  • 2 eggs (whisked until blended)
  • 1 teaspoon vanilla
  • 1/ 3 cup cocoa
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons espresso powder (optional)

Salted Caramel Sauce

  • 1 cup granulated sugar
  • 6 tablespoons salted butter, room temperature, cut up into 6 pieces
  • 1/2 cup heavy cream
  • 1 teaspoon salt

Notes and Tips

Once brownie bites have completely cooled, top with salted caramel sauce.

I use my Nordic Ware Bundt Brownie Pan. You can also use a regular size 12-count muffin pan. You would fill each cavity to 3/4 full. Once the baby brownie cakes finish baking in the muffin tin, cool for 5 minutes, then flip them over onto a cooling rack. You won’t have the lovely indent in the top that the bundt brownie pan makes, but you can do a lovely drizzle of salted caramel sauce over the top of each muffin cake, and they will taste just as yummy, and be small enough for two!

Step by Step Instructions

Step 1

Preheat oven to 350 degrees.

Step 2

Spray pan with baking spray. Melt butter in a medium sauce pan. 

Step 3

Remove from heat and add eggs, sugar, and vanilla. Add flour, cocoa powder, salt, and baking powder. (Also add expresso powder at this time, if using.) 

Step 4

Divide batter evenly in prepared pan, filling each of 12 “bites” 1/2 to 2/3 full. 

Step 5

Bake 15-20 minutes (16 minutes for more fudgy brownies!!) Brownies are done when a toothpick inserted in the center comes out clean. 

Step 6

Let brownies cool for 10 minutes on a cooling rack before unmolding.

Ingredients

Brownie Bites:

6 tablespoons salted butter, room temperature, cut up into 6 pieces
1/2 cup heavy cream
1 teaspoon salt

Salted Caramel Sauce:

1. Heat granulated sugar in a medium saucepan over medium heat, stirring constantly with a high heat resistant rubber spatula or wooden spoon. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn.

2. Once sugar is completely melted, immediately add the butter. Be careful in this step because the caramel will bubble rapidly when the butter is added.

3. Stir the butter into the caramel until it is completely melted, about 2 minutes. If you notice the butter separating, remove from heat and vigorously whisk to combine it again. (If you’re nervous for splatter, wear kitchen gloves.)

4. Very slowly drizzle in 1/2 cup of heavy cream while stirring. Since the heavy cream is colder than the caramel, the mixture will rapidly bubble when added. Allow the mixture to boil for 1 minute. It will rise in the pan as it boils.

5. Remove from heat and stir in 1 teaspoon of salt. Allow to slightly cool down before using. Caramel thickens as it cools.

6. Cover tightly and store for up to 1 month in the refrigerator. Reheat in the microwave or on the stove to desired consistency.


Notes

Once brownie bites have completely cooled, top with salted caramel sauce.
