This Chocolate Banana Icebox Trifle is an attractive upgrade to one of our family favorites! It was originally created years ago as an easily thrown together, no-frills, no-bake, chocolate banana icebox cake for my children when they were young and our budget was tight. 

It brings back so many memories for me… of times when I thought my children would be small and cuddly forever… when summers were endless… and when we had the gift of quiet weekends together, spent in our pajamas, watching movies, and snacking on bowls of our favorite chocolate banana icebox cake.

Because the original icebox cake is one of my son’s favorite treats, bringing back so many pleasant and sentimental memories, I wanted to somehow incorporate into the plans for his wedding breakfast… but then COVID-19 hit, the nation went into a social distancing shutdown, and his wedding celebration was canceled.

My son and his fiancé went ahead and had a private civil ceremony in the meantime, and our family was able to “attend” and witness their marriage by Zoom. This Chocolate Banana Icebox Trifle was my contribution to the “wedding reception” celebration.

While I’m sad that I wasn’t able to share it with my son on the morning of his marriage, the alternate plan is a perfect example of improvising at its finest…

Best of all, my husband and I enjoyed every bite later that day as we watched video replays and FaceTimed with the happy couple (and didn’t have to share)!!

Chocolate Banana Icebox Trifle

You will need a 3-quart trifle bowl for this recipe. The trifle uses Nilla wafers, bananas, instant chocolate pudding mix, instant vanilla pudding mix, milk, heavy cream, confectioners’ sugar, vanilla extract, and optional banana extract.

The chocolate pudding is prepared according to the package directions, as is the vanilla pudding. I use the prepared vanilla pudding to make a banana mousse as one of the layers in this delicious trifle by adding a whipped cream mixture flavored with banana extract. You don’t need to add the banana extract if you aren’t a fan of strong banana flavors, but I find it adds an extra dimension to the flavor combination that is absolutely delicious!

All the ingredients will be split into three parts. The trifle consists of three repeated layers, ending with the banana mousse on top.

Once the trifle layers are assembled, you’ll want to put it in the refrigerator for at least 2 hours to let everything set. Right before serving, garnish with sliced bananas, crushed Nilla wafer crumbs, and semi-sweet Mini Chocolate Morsels.

Chocolate Banana Icebox Trifle

Ingredients

  • 5-6 bananas (5 1/2 bananas for pudding; 1/2 banana for garnish)

  • 1 box (11 oz.) Nilla Wafers

  • 8 oz. (2 – 3.95 oz. boxes) Instant Chocolate Pudding

  • 5.1 oz. box Instant Vanilla Pudding

  • 8 cups milk (4 cups for the chocolate pudding; 3 cups for the vanilla pudding)

  • 1 teaspoon banana extract (optional)

  • 1 cup heavy cream

  • 2-3 tablespoons confectioner’s sugar

  • 1 teaspoon vanilla extract

Garnish:

  • 1-2 tablespoons Semi-sweet Mini Chocolate Morsels for garnish
  • 1-2 tablespoons crushed Nilla Wafers for garnish
  • 1/2 banana, sliced, for garnish

Notes and Tips

You will need a 3-quart Trifle Bowl for this recipe. You will also need either a stand mixer or a hand mixer.

Step by Step Instructions

Step 1

Set aside 2-3 Nilla wafers to be used for garnish. Separate the rest of the box of Nilla wafers into three equal portions.

Step 2

Using 4 cups of milk, prepare the Chocolate pudding according to package directions. Put the pudding in the refrigerator to set.

Step 3

Using 3 cups of milk, prepare the Vanilla pudding according to package directions. Put the pudding in the refrigerator to set.

Step 4

Add heavy cream, banana extract (optional), confectioners’ sugar, and vanilla extract to the bowl of your stand mixer. You can also use an electric hand mixer. Whip the heavy cream mixture on high speed until stiff peaks form.

Step 5

Gently fold the whipped cream mixture into the Vanilla pudding to create a mousse-like consistency.

Step 6

ASSEMBLING THE TRIFLE: Using ⅓ of the Nilla wafers, layer them on the bottom of the trifle bowl. Spread ⅓ of the chocolate pudding over the Nilla wafers. Layer ⅓ of the sliced bananas over the chocolate pudding. Next, spread ⅓ of the vanilla/banana mousse mixture on top of the bananas.

Step 7

Repeat the layers twice more, finishing with the top layer of vanilla/banana mousse.

Step 8

Place the trifle in the refrigerator to set for at least 2 hours. Just before serving, garnish with sliced bananas, crushed Nilla wafers, and Semi-sweet Mini Chocolate Morsels.
