The ingredients needed are minimal and easy to come by. You’ll need a package of cream cheese, granulated sugar, vanilla extract, fresh strawberries, some heavy cream for whipping, confectioners’ sugar, and a graham cracker crust.

You can easily make your graham cracker crust from scratch, using a hand roller or food processor to crush the graham crackers and adding melted butter, or you can use a pre-made graham cracker pie crust. I always keep one or two pre-made in my pantry for those days when I’m either short on time, or just want a recipe to be as super-easy as possible to put together.

Whether you use a pre-made crust or make it from scratch, this pie is amazing, refreshing, and will disappear from your refrigerator quickly!

If you decide to make your own graham cracker crust, you will need regular sugar, brown sugar, graham cracker crumbs, and melted unsalted butter. While your oven is preheating, pulverize your graham crackers in a food processor. You can also crush your graham cracker sheets by putting them in a large ziplock bag and use a rolling pin to crush them into fine, sandy crumbs.

Once you have prepared your crumbs, add the regular and brown sugars, melted butter, and cinnamon (if you are using it) to the graham cracker crumbs and pulse your food processor until the mixture is blended. You can also just toss it all together in a bowl using a fork if you prefer. The mixture should look slightly damp.

Transfer the crumb mixture to your pie pan and press them tightly into the bottom of the pan, using a pastry tamper. The bottom of a clean glass or measuring cup also works well for this. Using your fingers, press the crumbs firmly all around the sides of the pan. 

You will bake the crust and let it cool while you prepare the pie filling.

To prepare your filling, you’ll want to add the softened cream cheese, sugar, and vanilla extract to your large stand mixer bowl, and blend together on medium speed until smooth. Add 3/4 cup of the mashed strawberries into the mixture and blend together, then set the mixture aside while you work on the whipped cream.

Beat heavy cream and confectioners’ sugar together in a chilled glass or metal bowl until stiff peaks form. When you lift your beater or whisk straight up, the cream should hold sharp peaks. Now, fold the whipped cream into the cream cheese mixture, and then fold in the remaining 1/4 cup of sliced strawberries.

Spoon the strawberry pie mixture into the prepared and cooled graham cracker crust, smooth the top, and chill for several hours. You can also put the pie in the freezer for a few hours to chill, if you prefer, and want it to set faster.

  • ¼ cup confectioners’ sugar

  • ¼ cup sliced fresh strawberries

  • 1 (9 inch) prepared graham cracker crust

Graham Cracker Crust

  • 1 ½ cups (approx. 10 graham cracker sheets), finely ground graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1 tablespoons brown sugar, packed
  • 7 tablespoons unsalted butter, melted
  • ½ teaspoon ground cinnamon (optional)

The graham cracker crust needs to be made first, so it has a chance to cool before adding the pie filling.

Step by Step Instructions

Step 1

With your stand mixer or a hand mixer, blend softened cream cheese, granulated sugar, and vanilla extract in a large bowl until smooth.

Step 2

Add 3/4 cup mashed strawberries into the cream cheese mixture and blend together. (I use my Immersion Blender to “mash” the strawberries.) Set aside.

Step 3

Beat heavy cream and confectioners’ sugar in a glass or metal bowl until stiff peaks form. Lift your beater or whisk straight up – the cream will form sharp peaks.

Step 4

Fold whipped cream into cream cheese mixture until evenly mixed. Fold in the remaining 1/4 cup of sliced strawberries.

Step 5

Spoon strawberry mixture into prepared graham cracker crust. Chill at least 3 hours before serving. You can also freeze the pie for 2 hours if you need or want it to set quicker. If you freeze the pie, take it out 30 minutes before you are planning to serve.
